Here’s an old family recipe (as relayed by my father), for home or the camp site: Roasted Lemon Carp.
1- Carp 10-25 lbs.
1- Roasting board 1-2 inches longer than the Carp
1-tsp black pepper
1-cup butter unsweetened
Preheat oven to 400 degrees. Clean and gut the carp. Rub carp with butter and lemon. Place the apple slices in the carp. Season with salt, pepper, and garlic.
Center the carp on the roasting board, then wrap the carp and the roasting board in aluminum foil. Place in oven and cook for 35 minutes. (If the dish is being prepared over a camp fire, cook over glowing embers)
Carefully remove the wrapped carp and board from the oven. Unwrap the carp, being careful to retain the juices. Discard the carp and serve the board.
